Somewhere along the way, plates got smaller and prices got bigger. We're going the other way. Uncle Pocko's is a hometown food truck in Elgin with a simple idea: a good plate of food at a fair price, and you leave full.
Every order is made when you order it, by hand. We smoke our meats low and slow, make our sauces and ranch from scratch, and buy local whenever we can. The peppers in our salsa come from a hand-tilled farm a few miles from the truck.
We don't answer to shareholders. We answer to the folks in line.
If we can make it ourselves, we do. That's how it used to be done, and it's still the best way we know.

This is our first bottled salsa. We roast tomatillos, poblanos and green chiles over live fire, then blend them with onion, cilantro, lime and garlic. It's smoky, bright and made for breakfast tacos, burnt ends and anything else coming off the grill.
More small-batch flavors are on the way.
Uncle Pocko's started around a campfire, feeding whoever showed up hungry. A family recipe became a way to bring people together, because food tastes better when you share it. We still cook that way: hearty portions, fair prices, and every plate made like it's going to family.
